Greek Yogurt French Toast With Pancetta & Fresh Berries
Greek Yogurt French Toast
Loaf of uncut Sour Dough bread
6 eggs
1/2 cup Greek yogurt
1/3 cup Half & Half
1 tsp cinnamon (or allspice, nutmeg, etc)
1 stick unsalted butter
Real Maple Syrup
Pancetta (fry like bacon)
Fresh Berries (for serving)
1. Mix eggs, greek yogurt, half & half and cinnamon in a bowl.
2. Slice bread to thickness desired...I like it thick!
3. Dip each slice of bread (one at a time) in the egg mixture coating well each side. You can even let it sit in the mixture 30 seconds or so to let the bread absorb the liquid!
Melt in skillet over medium heat a couple of tablespoons of butter and when slightly bubbling, place one slice of the bread. After a couple of minutes, check to see if brown, then flip.
Continue with each slice of bread. I don't overcrowd the skillet with too many sices!
4. Heat syrup in microwave...gotta be hot...serve with another pat of butter and fresh berries, pancetta, and hot syrup! If you like, throw some chopped nuts on top or do fairy dust (confectionary sugar)!
Crunchy, sweet, heavenly!

Stayed a few days with my new grandson, Nicholas, and new Mommy and Daddy...one of the things I loved doing was, of course, being their private chef...yes, for whatever their littl' hearts desired! They weren't picky nor demanding--just so happy to have Ally Baba there!
