12-15 Large Shrimp peeled & deveined
1 can mandarin oranges drained
1 large Navel Orange
1 large clove of garlic - minced
1 large stalk of celery
salt & pepper to taste
handful of fresh parsley
1/4 cup olive oil
Boil shrimp for about 2 minutes until pink & tender, cool
Cut shrimp into bite sized pieces, place in medium sized bowl.
Mince garlic, chop celery, add to bowl.
Drain mandarin oranges, add to bowl.
Cut up Navel Orange, add to bowl.
Salt & pepper, to taste.
Drizzle with olive oil, stir to combine all flavors.
Garnish with parsley.
SERVE!
We usually serve this with other fish dishes on Christmas & New Years Eve! It's an Italian Tradition.
