Grand Marnier Strawberry & Lemon Curd
Lemon Curd:
1/3 cup fresh squeezed lemon juice
3 beaten eggs
1/3 cup agave
1/3 cup fresh lemon zest
½ pint heavy cream
Grand Marnier Sauce:
4 cups of strawberries cut in halves (reserve 1 cup)
1/3 cup brown sugar
3 tbl butter
½ cup Grand Marnier
What you do:
1. To make lemon curd you will need a double boiler. Place your medium size mixing bowl over a pot of water. Turn heat to medium high for heating the water. Whisk together all the ingredients in the bowl and sit atop the pot of hot water. Reduce heat to medium, and continually whisk the mixture and it will thicken and become creamy. Turn heat off when thickened.
2. To make Grand Marnier Sauce. Over medium heat, melt butter in a saucepan then place 3 cups of whole (smaller strawberries) and halved (larger strawberries). Add brown sugar and blend. Reduce heat to medium low and add Grand Marnier. Cook for 5 minutes. Turn off heat and add the remaining strawberries coating with the mixture.
3. The lemon curd can be served with the warm strawberries drizzled on it and garnish with fresh mint.
4. Another serving suggestion: Serve lemon curd over store bought (or homemade) angel food cake or pound cake that has been cut into cubes, drizzle with Grand Marnier Strawberry mixture and garnish with fresh mint.
5. Get creative…you could also serve the lemon curd over cookies—crumbled
