Frozen Bananas With Chocolate And Coconut
2 cups semisweet chocolate chips
1 tablespoon butter
2 cups sweetened coconut flakes
3 large bananas, cut into large bite-size pieces
1) Place chocolate chips and butter in a microwave-safe bowl. Melt it on high heat for about 30 seconds. Remove and stir. As your stir, the chocolate chips will melt. Repeat as needed, 10 seconds at a time.
2) Place coconut flakes in shallow bowl. Cut up bananas into bite size pieces, usually cut each banana into thirds.
3) Spear each banana with an ice-cream or lollipop stick.
4) Prepare a dish lined with wax paper or aluminum foil. Make sure this dish can fit in your freezer.
5) Holding the stick, dip the banana in the chocolate mixture. Coat evenly. Then roll the chocolate-covered banana in the dish with coconut flakes. Then place it on the prepared dish. Repeat steps for remaining bananas.
6) Place the dish in the freezer for at least 20 mins and up to 8 hours. Serve cold on the stick!
