Mom's Strawberry Angel
1 Angel Food Cake
1 lg. pkg. Strawberry Gelatin
2 pt. Whipping Cream or 1 Large Tub of Dessert Topping
2 pts. Fresh Strawberries or 1 Lg. pkg. Frozen Strawberries
If using Whipping cream, may add:
6 Tbsp. Sugar
1 tsp. Vanilla
Earlier in the day, boil 2 c. water and make Gelatin according to package directions. Place into glass 10"x14"(appx.) dish. Refrigerate to set.
Wash and hull Strawberries. Set aside about 6 with leaves. Slice remaining berries.
Tear Angel Food Cake into 2" cubes.
Whip cream, adding vanilla and sugar if desired. Reserve 1 1/2 cups.
With knife, cut Gelatin into 1" cubes.
In a large clear glass bowl, alternate cake, cubed gelatin, whipped cream,and berries. Frost top layer with remaining whipped cream. Arrange whole berries and leaves on top.

Chef's Note & Story
My Mother often made this beautiful dessert for our family during the holidays. She served it in an heirloom crystal bowl, and it was so pretty being visible through the cut glass. Best of all, it was so delicious. It made a beautiful ending to any kind of meal.
It has always brought fond memories of my Mother and good times to me when I make it.
Chef's note: This Dessert is equally delicious made with orange gelatin and mandarin oranges for spring desserts.
Whatever fruit one uses, it's Perfect for Mother's Day!!
For Diabetics, use Sugar Free gelatin, and eliminate Sugar and use Lite Dessert Topping.
