White Bean Soup For Crockpot

2 pounds navy beans
3/4 cup finely chopped celery
1 tbsp oregano
1 tsp basil
2 medium onions, chopped
1 tsp thyme
1 ham hock with lots of meat (trim fat and skim)
1 - 16 ounce can tomatoes
3 garlic cloves, minced
1 large potato, peeled and diced
several dashes of Tabasco sauce
salt and pepper
Combine all ingredients, except the salt, in crockpot and cover with water. Cook on low for approximately 6 hours or until beans are soft. Add water if needed. Remove the ham and pull the meat off the bone, shred and return to crockpot. Season with salt.
