Pineapple Carrot Salad

One bag (usually 10 oz) "matchstick" carrots
One can (usally 14 oz) pineapple chunks, drained and liquid reserved
1/2 cup raisins
Parsley, chopped
Salt and pepper to taste
Mix it all in a bowl! It's up to you, how much of the pineapple juice you like to add in. It's very easy - and easy to increase the amount made.
If you'd like to make a creamier version, you can add yogurt (plain or pineapple).

This is especially a favourite at cook-outs, it goes great with pork. Vegetarians love it, because it's substantial enough that they don't miss the meat being grilled.
