4 small Russet Potatoes (about1 lb)
1 1/4 cup Milk
4 Eggs
6 tablespoons Sugar
4 tablespoons Honey(if you like, use as much as you want)
1.Peel potatoes and cut them into small cubes. Heat in a microwave for 5-6 minutes or until tender.
2.Mash potatoes in a bowl. Add eggs, sugar and milk. Whisk until smooth. Pour the mixture into casseroles. (5 oz each) Cover with aluminum foil.
3.In a large pot, bring 2 cups of water to boil.
4.Place casseroles in the pot. Cover and cook over low heat for 20-23 minutes or until sets.
5.Chill in the refrigerator until serve. Pour 1 tablespoon of honey on the pudding and serve.
I was a sickly girl when I was a little. Somehow my mother used to make this pudding when I got sick. It worked faster than prescription. Since I moved out of my parents'house, I make this when I start to feel sick. Of course I feel better SOON.
