1 slice of sandwich cheese
3 slices of turkey lunch meat
3 eggs
1 tbsp sour cream
1 tsp water
Dash of dried basil
Dash of garlic powder
Salt and Pepper
1 tbsp Salsa
1/2 tsp butter

2 Tortillas
Prep: Slice lunch meat into 1/2 inch squares. In a small bowl beat eggs, water, sour cream, basil, garlic powder, and salt and pepper together until well mixed.
Cooking: Melt butter in a skillet over medium high heat. Pour in egg mixture. Gently push eggs across the bottom of the pan. When the eggs start to get firm, tear the cheese into small pieces and add to the eggs. When the eggs are almost done, add the turkey and allow it to warm all the way through. Sprinkle salsa over the top of the eggs.
To-Go Variation
This is great rolled up in a tortilla as a finger food breakfast burrito. You can also replace the turkey with sausage.

The sour cream in this recipe helps make the eggs more rich and delicious. I recently purchased a set of Paula Dean pans. The non stick surface is great and made clean up a breeze.
This makes a speedy breakfast, lunch or snack! I've never tried sour cream in eggs!
