Smores Sweet Potato Experience

2 3/4 pounds sweet potatoes

1 1/4 cups granulated sugar

1/3 cup light brown sugar

1/4 teaspoon cinnamon

1/8 teaspoon freshly grated nutmeg

1/8 teaspoon salt

5 large eggs

1 1/2 cup semisweet chocolate chips
1/2 bag mini marshmallows
Graham cracker crumbs
Chocolate syrup
Caramel topping (optional)

Recommended Products

1. Preheat the oven to 350 degrees F.
2. Bake the sweet potatoes on a baking sheet for about 1 hour, or until soft when pierced.
3.Let cool; remove the skins. Purée the potatoes in a food processor.
4. In a medium bowl, combine the sugars with the cinnamon, nutmeg and salt. In a large bowl, lightly whisk the eggs.
5.Whisk in 3 cups of the sweet potatoes, then the sugar mixture. Spoon half the mixture into a 9x 13 baking dish that has been sprayed with non stick baking spray.
Top with half the chocolate .
6. Cover with the rest of the mixture. Arrange the remaining chocolate chips on top. Add a few more if needed

7.Bake in the center of the oven for about 1 hour
8.Take out and top the dish with a bag of mini marshmallows. Put back in the oven until marshmallows are golden.
Sprinkle graham cracker crumbs on top
Top with chocolate syrup .Top with caramel syrup (optional)

Chef's Note & Story

A favorite part of Thanksgiving was going to my Grandmother's house to have her "famous" sweet potato pie with the toasted marshmallows. As time went on I asked for the recipe. I tried to relpicate it, but came out with a dried out mess. After having smores one night at a party, I thought of my Grandmother's Sweet Potato Pie and how yummy it would be if I turned it into a smores treat. After several attempts, I think I've made my Grandmother proud and she'd give me the thumbs up on my creative cooking!!! I now make it all year round. My kids love it for a Sunday brunch with sunny side up eggs!! It makes me think of Grandma every time I make it!!
