Chef's Note & Story
A favorite part of Thanksgiving was going to my Grandmother's house to have her "famous" sweet potato pie with the toasted marshmallows. As time went on I asked for the recipe. I tried to relpicate it, but came out with a dried out mess. After having smores one night at a party, I thought of my Grandmother's Sweet Potato Pie and how yummy it would be if I turned it into a smores treat. After several attempts, I think I've made my Grandmother proud and she'd give me the thumbs up on my creative cooking!!! I now make it all year round. My kids love it for a Sunday brunch with sunny side up eggs!! It makes me think of Grandma every time I make it!!
Sweet potatoes are very nutritious and very rich in fiber. This is definitely on my list for a change. i usually have it as a salad or just boiled then put some butter on it. This will make my day
