Cheese Chicken Mozzarella

1 pound chicken breast
2 Cans of prepared spaghetti sauce
8 ounces shredded mozzarella cheese
1 cup Italian bread crumbs
1 cup vegetable oil
Four servings of cooked spaghetti
Prepared salad of choice

Preheat oven to 400 degrees

Thaw chicken breast and cut into 3 ounce serving size pieces.

Shake each piece of chicken in bread crumbs and set aside.

Spray a deep heavy skillet with cooking spray, turn heat to medium and add vegetable oil.

Let oil heat for about 2 minutes or until sizzles when you put in the first piece of chicken.

Fry chicken pieces a few pieces at a time until browned nicely on each side. (Don't over-crowd)

In a large casserole or rectangle cake pan add enough spaghetti sauce to coat the bottom good. As chicken pieces are done drain temporarily on paper towels and place side by side in spaghetti sauce.

Sprinkle cheese on chicken pieces, cover with Spaghetti sauce, and then add lots more cheese.

Cover pan with aluminum foil tightly.
Make a small slit in top to allow steam to escape.

Place in oven and braise for about 30 minutes.

about half-way into the cooking time prepare the spaghetti, toss your salad, and set the table Because when the beeper goes off the second time (after the 30 minutes) your meal is ready.

Careful, make sure you use your hot pads to remove from the oven!

Sprinkle with some Parmesan cheese if you have any and enjoy!

After seeing store bought stuff similar to the recipe above, I was inspired to make my own. It turned out so much better, so much cheaper, and we usually had enough for another meal.
