4 boneless chicken breasts
3/4 cup frozen corn
1 can black beans, rinsed
1 cup salsa
2 Tbsp canola oil
2 Tbsp chili powder
1 cup Mexican blend shredded cheese
1/2 cup crushed tortilla chips

Preheat oven to 350.
Rub chili powder on chicken breasts. Brown chicken in oil, using pan that goes from stovetop to oven.
Push chicken toward middle of pan.
Mix together black beans, corn and salsa.
Pour evenly over chicken.
Top with cheese and tortilla chips.
Bake uncovered for 30 minutes or until chicken is done.

Chef's Note & Story
This recipe originally was found on a website. It didn't have any cheese or tortilla chips. I thought it needed some umph, so I ramped it up a bit. Sometimes I use a mojito lime chili powder that is found at one of our local markets instead of plain chili powder.
