Asparagus, Chicken & Tomato With Goat Cheese

1 Tbs Olive oil or butter
1 c Asparagus, cut into 1” pieces
Kosher salt, to taste
Fresh ground pepper, to taste
1 c pre-cooked chicken, diced/shredded
(from leftover grilled chicken or a rotisserie chicken)
¼ tsp garlic, minced
3 Campari or Roma tomatoes, diced
1 Tbs Herbed goat cheese, at room temperature
Sauté asparagus in oil/butter over medium heat for 1 minute with salt & pepper. Add chicken, cook covered for 2 minutes, enough to heat chicken through. Add tomatoes, garlic and goat cheese. Stir together, cover and cook for up to 3 minutes or until goat cheese melts into mixture. Serve with toasted French bread or over rice or pasta.
