  • Ingredients


    2 ten ounce bags of frozen broccoli florets or mixed vegetables, thawed

    4 cups of cooked and cubed chicken

    2 cans cream chicken soup

    1 cup mayonnaise (not Miracle Whip)

    2 teaspoons lemon juice

    3/4 teaspoon curry powder

    1½ cups shredded cheddar cheese

    1/2 stick butter

    2 cups Panko or regular bread crumbs





    Directions


    Spray a 9x12 casserole dish with spray

    Place the vegetables in layer on bottom of casserole dish

    Layer the chicken on top of the vegetables

    In medium bowl combine soup, mayo, lemon juice, curry powder and mix well.

    Pour over the chicken

    Layer the cheese over the sauce

    Melt the butter in bowl and add the bread crumbs making sure to coat them all.

    Put them on top of the casserole and bake in 425 degree oven for 20 minutes or until bubbly and crispy on top.

    This is an awesome dish that whips up quickly when you have that unexpected company show up at the last minute. I have been using this recipe for years and everyone just loves it. Simple but can make an elegant presentation.
