8 diagonally cut slices French bread, 1/2 inch thick
Cooking spray
2 tablespoons grated Parmesan cheese
1 lb lean (at least 80%) ground beef
1 small green bell pepper, sliced
1 or 2 cloves garlic, finely chopped
1 can (14.5 oz) diced tomatoes with
Italian-style herbs (or other variety), undrained
1 can (8 oz) pizza sauce
1 jar (4.5 oz) sliced mushrooms, drained
1) Set oven control to broil.
2) Place bread slices on ungreased cookie sheet.
3) Spray bread with cooking spray; sprinkle with cheese.
4) Broil with tops 4 to 6 inches from heat 1 to 2 minutes or until light brown; set aside.
5) In 10-inch skillet, cook beef, bell pepper and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is brown; drain.
6) Stir in tomatoes, pizza sauce and mushrooms.
7) Cook 1 to 2 minutes or until hot.
8) Place 2 toasted bread slices on each of 4 serving plates.
9) Top with beef mixture.
