Sweet Heat Salmon

2 lbs fresh salmon
2/3cups Diane's Sweet Heat Jam(anyflavor)
1/3 cup rice vinegar
1/3 cup soy sauce
3 green onions, sliced
1 T fresh ginger, grated
2 t sesame oil
3 cloves garlic, minced
1/4 t crushed red pepper
1/4 cup fresh cilantro
3 green onions, sliced
Foil
Rinse salmon and pat dry.
Combine the first eight ingredients.
Marinade in refrigerator for 1-2 hours.
Cut a piece of foil large enough to wrap fish securely.
Remove fish from marinade.
Reserve marinade.
Place fish on foil and cover securely.
Grill 15-18 minutes at medium heat.
Bring reserved marinade to a boil.
Reduce heat and simmer for 10-15 minutes.
Drizzle marinade over cooked salmon.
Sprinkle with pepper, cilantro, onions.

I make habanero fruit jams (Diane's Sweet Heat) and am always asking for recipe ideas. This one was concocted by my sister and has been a hit.
