Crispy Peanut Chicken With Steamed Veggies

Chicken:
4 skinless boneless chicken breast (organic is preferred)pounded to a uniform thickness
1/2 cup whole wheat flour
1 egg
1 cup Plain Jane Peanut Butter Granola
Veggies:
1 lb broccoli florets, chopped
1 green pepper, cut into thin strips
1 red pepper,cut into thin strips
1 small onion, cut into thin strips
1 clove of garlic, finely diced
1/2 c. Newman's Own Lighten Up Low Fat Sesame Ginger Dressing
Salt and pepper to taste

Set up a breading station by placing the flour, egg and granola onto three small shallow bowls. Beat the egg with 2 tbs of water. Preheat a nonstick skillet with 2tbs of canola oil.
With a pair of tongs first coat the chicken in flour, pat off excess flour with a paper towel, coat in the egg mixture, cover with granola and place into the skillet. Repeat for all four pieces.
While the chicken is cooking, toss all of the veggies in a microwave safe bowl. Add two tbs of water and cover with saran wrap. Microwave on high for 5-8 minutes depending on the strength of your microwave. Veggies should still remain brightly colored with a little crunch to them. Keep them covered until they are ready to be served. Toss with the dressing just before serving.
Back to the chicken. Flip at the 5 minute mark. Cook on the other side for another 5-8minutes depending on the thickness of your chicken. Make sure the chicken is thoroughly cooked.
Serve up each chicken breast with a side of veggies and enjoy!

I don't eat meat myself but others in my household do. I wanted a fun way to use up my test batches of granola. I find it helps if you break up the clumps of granola before breading the chicken.
