Mushroom Pizza With Leeks & Truffle Oil

Pizza dough ( Trader Joe's )
10 Mushrooms sliced
1/3 cup parma cheese grated
Olive oil for drizzling
3 large garlic cloves diced
leeks ( white part only ) diced
1 large tomatoes sliced
sea salt
truffle oil for drizzling

Trader Joe's pizza dough is already made, all you have to do is roll it into what ever form you like. I like to make a thin crust.

Slice enough mushroom to cover the pizza. ( to your liking ). Slice the tomato into thin slices.
Grate the cheese. Set aside.

Heat a skillet with 1/2 teaspoon olive oil. Flash stir fry the leeks and gralic in hot olive oil. ( about 1 minutes )
set aside to cool.

Place your pizza dough on a pizza stone or pizza pan using any of these item, the pizza crust will not be soggy.

Layer the pizza starting with the leeks and garlic.
add the cheese and top it off with the mushrooms and tomatoes drizzle with truffle oil and sea salt.

Easy for breakfast or lunch. Makes 1 slice a pieces for 4. Serve with a side of greens.
