3 cups rice flour
1 cup butter ( 2 sticks ) melted
4 eggs beaten
2 cups sugar
2 teaspoon vanilla extract
1 teaspoon banana extract( optional )
1 teaspoon baking powder
1 can 12 oz evaporated milk
2 cup sliced banana
1 cup chopped walnuts ( optional )
Oven at 350 25-35 min baking *
Whisk the eggs and sugar. set aside.
In a large bowl mix rice flour, baking powder and evaporated milk
Melt butter and let it cool before adding to the mixture.
Combine the egg mixture with the evaporated milk mixture adding the vanilla
and banana extract.
Mix well until smooth. Pour mixture onto a muffin pan with paper cupcake cups.
Arrange the slice banana slices & chopped walnuts into the mixture.
25 minutes into baking, check to see if the cupcakes are ready. ( check with a tooth pick ) . Do not over bake.
Cool cupcakes for 10 minutes. Dust the top with powder sugar.
