Chocolate Covered Bacon
2 pieces Los Rios 75% chocolate broken baking bars
1 package bacon (any type but I prefer thick-cut and dry-cured)
Optional toppings: slivered almonds, smoked sea salt, cayenne pepper, white chocolate drizzle, caramel
Preheat oven to 375°F
Bake bacon to liking (I prefer crispy over chewy ~20 minutes)
Set up a double boiler: Heat a pot of water to boil and set to simmer. Place a heat-proof bowl over the pot and melt chocolate stirring continuously.
Remove bacon and place on paper towels to cool and degrease.
Carefully dip bacon into chocolate and place on parchment paper to set.
Before setting takes place, you may sprinkle the optional ingredients.
