2 cans - Garbanzo beans
1/2 cup red onions
1/4 cup raw green mango
1/4 cup English cucumber
1/4 cup tomatoes
1/4 cup avocado
2 tablespoon cilantro
1 lemon - squeezed
1/4 teaspoon - chili powder
1/2 teaspoon - cumin powder
1/2 teaspoon - dry mango powder (amchur powder) - Available in Indian grocery stores
1/2 teaspoon - coriander powder
Salt and pepper to taste
1. Drain the garbanzo beans and its excess liquid through a colander. Rinse them thoroughly in the running cold water. Store them in the refrigerator.
2. Finely chop all the vegetables and set them aside.
3.In a large mixing bowl, mix the onions, mangoes, tomatoes, cucumbers, avocado, spice powders and toss it well. Adjust salt and pepper to taste.
4.Squeeze the lemon juice on top and garnish with cilantro. Serve it cold.

I love beans. Some days, I even eat them with just salt and pepper. They are so filling, also nutritious and importantly so easy to fix. "The garbanzo beans salad with the Indian spices" is quick fix salad which is irresistibly tasty, healthy and is made with easy to find vegetables and garden fresh cilantro. A dash of zesty lemon juice compliments the dish with perfect tangy taste and the use of ethnic Indian spices creates a plethora of incredible flavors in every mouth. You can also add orange segments, fennel or lettuce. Just toss in any of your favorite veggie and serve. I prefer to eat them chilled.
