Bone Suckin’ Pork Chops With Melon

Bone Suckin’ Sauce, 1 cup
Bone Suckin’ Seasoning & Rub, 2 tsp.
Pork Chops, 6 boneless, ¾ inch thick
Whipped Cream, ½ cup
Cream Cheese, 16 oz.
Chives, ¼ cup (set aside 2 Tbsp. for garnish)
Cantaloupe, 1 skinned and sliced ½ inch

Marinate chops in Bone Suckin’ sauce for at least 1 hour. In a bowl whip cream until stiff and combine cream cheese and most of chives (save 2 Tbsp. for garnish), set aside and refrigerate.

Grill the chops for 4 to 5 minutes per side, mopping the Bone Suckin’ Sauce over the chops while they are grilling. Skin and slice cantaloupe and set aside.

Place grilled chop onto plate, add a dollop of whipped cream cheese and chive mixture on top of chop and top with cantaloupe. Garnish with chives. Serves 6.
