Cajun Shrimp 'n Dip
2/3 cup of mayonnaise
1 scallion chopped
2TBS dijon mustard
2TSP lemon juice
1tsp grated lemon zest
1tsp capers rinsed and chopped
24 jumbo shrimp
2tsp old bay
1/2tsp onion powder
1tbs oil
lemon wedges
In a bowl stir together mayo,scallion,mustard,lemon juice,zest and capers. Cover and refrigerate.
Clean shrimp
Toss Shrimp with old bay and onion powder until evenly coated. In large non stick skillet heat oil over medium heat.
Add shrimp turning once,cook 2 to 3 min serve hot or cold with dip.
