Easy Cheesy Potato Soup

5 lb. potatoes
1 quart 2% milk
8 oz. shredded 2% cheddar cheese
Salt to taste
Boil 5 lb bag peeled/chopped white or red potatos until soft
Drain.
Add 1 quart 2% milk and simmer on low for 45 minutes. This should not ever boil.
Mash potatos while in pot, this should be very simple at this stage.
Add 8 oz. shredded cheddar cheese and allow to melt in, stirring every few minutes. Add salt to taste.
**This is a simple homemade soup with very few ingredients that kids seem to love. It takes a while but the actual work required is minimal and many other things can be done while it is left to simmer.

Chef's Note & Story
You can add small raw sliced carrots about 15 minutes before you are done simmering to add some color and additional vegetable value. I also like to serve with green onions sprinkled on top as a garnish for the more appreciative adults:)
