1 French Vanilla Cake Mix (to my knowledge only Duncha Hines makes this)
1/3 cup melted butter
1 egg
Filling:
12 oz apricot prserves
8 oz cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla
1 egg
Pre heat oven to 350°
Combine cake mix, melted butter, and egg, mix well with fork til crumbly. Gently spoon 1 1/2 cups crumbs into a bowl.
Press remaining crumbs into a 9x13 pan that has been sprayed with non stick spray.
Bake at 350° for 10 minutes.
Spread preserves evenly over warm crust.
In a small bowl combine the cream cheese, sugar, vanilla, and egg, beat til smooth.
Spread over preserves.
Sprinkle reserved crumbs evely over cream cheese layer.
Bake for 25 to 30 minutes, or until topping is golden.
Chill before serving.
Store in fridge.
My sis in law Donna Mae gave me this recipe after I had them at her house. Even more amazing is she doesn't like to cook, or eat either one, so you can imagine my amazement at their richness and they are just delicious.
