18.25 oz package devils food cake mix
1 1/4 cup water
1/2 cup oil
3 large eggs
20oz frozen sweetened strawberries, thawed and 2/3 cup jujice reserved
2 tablespoons cornstarch
5 to 8 tablespoons sugar
1/2 to 1 teaspoon kirsch, optional, to your taste
16 ounce strawberry cream cheese spread
1 cup whipped cream
14 plus more for garnish fresh strawberries with leaves attached
Make cake mix to package directions, using the water, oil and eggs, let cool.
I used 2 rectangular cupcake pans for this. Using 1/3 cup batter per cupcake hole.
While baking, thaw strawberries, cutting them smaller.
In a sauce pan put the sugar, cornstarch, and 2/3 cup strawberry juice, stir to smooth.
Bring to boil and stir until thickened, add strawberries and cook a min more.
Remove from heat stir in kirsch.
Let cool.
Put strawberry cream cheese in a zip lock bag, cut off corner to make a piping bag.
Cut off the rounded tops of cupcakes, saving them for a snack.
Pipe a line of cream cheese all aroumd the outside top of the cupcakes.
Put a dollop of strawberry filling in the middle of the piping.
Put a dollpo of whipped cream in the middle of the strawberry filling, out a strawberry fan right on top.
If you want to go crazy, you could drizzle some hot fudge sauce over the tops.
To make a strawberry fan, make 4 side by side cuts into the narrow end of the strawberry, and fan it out with your fingers.
