4 boneless chicken breast
1 Jar 12oz apricot jam
3 sweet potatoes
1 tbs soy sauce
3 tbs butter (I always use real Butter)
All spice
Ground Cloves seasoning
Peel sweet potatoes slice and cook for 20 min. Add a little all spice in the water.
preheat oven 350
Slice chicken breast & season w/S&P;
For your glaze
Combine Apricot Jam, w/3pats of butter, 1tbl soy sauce,pinch of all spice & cloves seasoning in a saucepan over medium heat for about 10 min then set aside.
Mash sweet potatoes , add butter, a dash of all spice.
Stuff chicken breast with potatoes, brush glaze over top cover w/ foil. bake for 25 min. Take foil off bake another 15 t 20 min.
Spoon on remaining glaze and serve.
I was not sure about these combination's, but it will be a regular dish at our table.
This can be adapted for gluten-free by using Bragg's amino acids in place of soy sauce. I can't wait to make this!
