4 medium red potatoes
2 Glove garlic
1 tsp chives
1 green scallion
Sour Cream
Wash potatoes, place garlic in foil, . Drizzle with olive oil and wrap in the foil. Roast until cloves are lightly browned and tender, about 30 minutes.
I do this ahead of time then just set aside and I have when needed for a recipe.
Put about 4 slides in potatoes, add the garlic in the open area and the green onion, drizzle olive oil, salt & pepper.
Place in oven coverd in foil for about 20 min. Take foil off place back in oven for about another 25min.
Plate up, put sour cream & chives on top
