3 Tasty and Fluffy Gluten Free Waffles You Need To Devour

Fluffy Gluten Free Pizza Waffle

We were inspired by Will It Waffle’s Daniel Shumski and his waffle creations to get our own waffle maker just so we can make these savory and sweet waffles. But first, you need to make a great waffle batter as your base. Making these fluffy gluten free waffles requires an extra step but the results will be worthwhile.

Fluffy Gluten Free Waffles (Makes 8)

  • 1-1/2 cups Gluten Free All-Purpose Baking Flour (I used Bob’s Red Mill)
  • 2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1 Tbsp. Sugar
  • 1 Tbsp. Oil
  • 2-3 Tbsp. Coconut Oil or a high smoke point oil
  • 3/4 cup Milk
  • 4 Eggs, separated
  • 1 tsp. Vanilla Extract

While you’re pre-heating the waffle iron, mix all of the dry ingredients in a large bowl.

In a separate bowl, whip the egg whites and vanilla until it forms stiff peaks or resembles whipping cream. Need more muscle? You may want to use your KitchenAid Mixer to get those stiff peaks quickly!

In the measuring cup, whisk milk, yolks and oil. Add this milk mixture to the dry ingredients and blend together. With a rubber spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy.

Grease the waffle iron with the coconut oil and begin making waffles according to the manufacturers instructions. Need some inspiration? Add a few more ingredients to the batter to make pizza, s’mores and crab cake waffles!
