Meet Fat Toad Farm!
Fat Toad Farm is a small, family-owned and operated goat dairy in Central Vermont specializing in farmstead Goat's Milk Caramel sauces and fresh chevres (chevre is soft goat cheese, from the French for goat).
Lead by husband and wife team Judith Irving and Steve Reid, as well as a supporting cast of offspring and friends (Josey, Calley, Hannah, Nick, Tim & Katie) and a crew of invaluable interns, Fat Toad Farm has grown from just four happy goats in the garage in 2008, to 75 goats in a state-of-the-art greenhouse barn today.
Tasty Goat's Milk Caramel
Caramel made from goat's milk is a traditional Mexican confection known as "cajeta." Fat Toad Farm's cajeta recipe comes from the Baja Peninsula where Josey, the oldest daughter in the family, lived for many years. Fat Toad Farm was one of the first small-scale artisan producers of Goat's Milk Caramel in the United States.
Why Goat's Milk?
The trick is using incredibly fresh, cold milk. Goat's milk is very sensitive to its environment, so Fat Toad Farm only uses incredibly fresh, cold milk. Milk that is allowed to warm up and linger will start to take on a distinctive "goaty" taste.

Many caramel sauces list "sugar" as the main ingredient, but the caramel from Fat Toad Farm starts with fresh, cold goat's milk. The already-winning recipe is polished with organic ingredients, like vanilla beans. Because of FTF's expertise, the end result is complexly creamy, with just the right amount of sweetness. As for the goat's milk, it adds a slightly tangy flavor without being "goaty." For the goat's milk naysayers, I dare you to try this and not become addicted!
I would give this caramel for any and all occasions, even a normal Tuesday. I would love to try all of the flavors. It is great out of the jar and with fruit dipped in it.

Love that it's soft. Super easy to drizzle on ice cream, no heating necessary. Super delicious.
I didn't enjoy this caramel. It wasn't quite sweet enough and the goats milk flavor was overpowering. Bummer. I was really looking forward to this one.
