Crunchy Cranberry Butternut Squash Soup
Ingredients

* 1 butternut squash
* 1 medium onion, chopped
* ½ cup cranberries
* 2 large carrots, shredded
* 2 large parsnips, shredded
* 2 cloves garlic, minced
* 4 cups vegetable broth
* 2 Tbsp. rosemary, finely crushed
* ½ tsp. cinnamon
* ½ tsp. curry powder
* ¼ tsp. cumin
* 1 cup Nuts About Granola
* 2 Tbsp. ground flax seeds
* Sea salt and crushed white pepper, to taste
* Toppings: Greek plain yogurt and fresh basil leaves

Directions

* Seed and cube the butternut squash.
* In a large pot, combine chicken broth along with cranberries and root veggies: onion, carrots, parsnips and garlic. Add cinnamon, curry powder, cumin, granola, ground flax seeds and sea salt and crushed white pepper; cook over medium heat for 30-40 minutes or until squash is tender.
* Lower heat to a simmer; cook for an additional 15-20 minutes.
* Transfer soup mixture to a blender; puree until smooth.
* Serve warm with a dollop of Greek yogurt and freshly chopped basil leaves.
* Enjoy.

I love making Granola Bark! 16oz chocolate or white chocolate. 3 cups of granola. Melt chocolate and stir in granola. Spread it onto wax paper covered cookie sheet. Refrigerate until firm (about 30 mins). Break into small pieces. Enjoy.

Filling 2 granny smith apples, peeled, cored and sliced thin
1 lemon, juiced
2 T. flour
½ t. cinnamon
¼ t. nutmeg
½ T. apple cider vinegar
½ c. apple juice
Topping
½ c. rolled oats
½ c. granola
¼ c. brown sugar
Pinch salt
2 T. unsalted butter, divided into four
Caramel candy
1 c. white sugar
1 T. water
Garnish
1 c. heavy whipping cream
Pinch cinnamon
Pinch nutmeg

Preheat a large skillet over medium heat. In a large bowl combine apples, half of the lemon juice and flour. Toss to coat evenly and add to skillet. Sautee apples about 3 to 5 minutes stirring frequently for even cooking then add cinnamon, nutmeg, cider vinegar and juice and bring to a boil. Reduce heat to low and simmer about 10 minutes.
In the meantime preheat oven to 325 degrees F. Lightly spray four 5 ounce oven proof ramekins. Scoop the apple mixture evenly into each ramekin. In a medium bowl combine oats, granola, brown sugar and salt and combine thoroughly. Distribute the topping in proportion atop the ramekins. Place one half tablespoon onto each ramekin and place all on a baking sheet. Bake 20 to 25 minutes, until golden and bubbly.
To prepare the caramel candy top combine white sugar and water in a non-stick medium sauce pan. Heat over low and let the two begin to meld together. Swirl the pan as the sugar melts and browns lightly. Once sugar is completely dissolved and has a light tan it is ready. Evenly drizzle each ramekin with caramel candy. It will harden as time passes.
Using a hand held mixer or standing mixer, whip cream with spices until stiff peaks form, about 3 to 5 minutes. Be careful not to over mix or cream will turn to butter.
Finish each ramekin off with a dollop of spiced whip cream and serve.

My favorite way to use granola is to sprinkle it on top of melted white, dark and milk chocolate after I have slowly melted it on a parchment covered baking sheet and swirled the chocolates in a decorative pattern--delicious homemade granola chocolate bark! Sprinkle with a little bit of kosher salt, allow to cool and harden and then break in to pieces and enjoy!
