Ingredients
2 cups milk
4 scoops vanilla bean ice cream
2-cup fresh mango chunks (or you may use frozen but make sure they are thawed)
3-tablespoons ginger jam
1-cup heavy cream
1-tablespoon ginger jam
2 tablespoon candied ginger
2 straws
2 cherries for the finish
Directions
Gingered whip cream
Place heavy cream in mixer, start mixing slowly for 2 minutes then turn up mixer to medium, add ginger jam and whip until firm peaks appear. Remove from mixer and place in small bowl with lid and place in refrigerator till ready to top shake.
Place mango into blender and blend until smooth, add ice cream and ginger Jam. While blender is blending ingredients add milk 1 cup at a time blend till thick and creamy.
Pour into two-chilled shake or parfait glasses top with whipped cream sprinkle candied ginger and a cherry on top. Stick a straw and enjoy the creamy mango ginger goodness!!
